This easy recipe packs the most flavor you’ll ever experience in a classic egg salad sandwich. It requires no prep and is fast to cook, making lunch much more enjoyable.

Seasonings are the most important part of any recipe, but they are especially important for the basics. With the rich flavor of the paprika added to this, it adds the perfect amount of tang without being over the top. Paprika is not the only addition to this that makes it so special.

Egg salad is a great source of protein when you are looking for something a bit lighter than eating meat itself. It’s not hard to recognize that for the majority of people, getting the proper amount of protein each day can be quite a struggle.

The first step to making egg salad is to boil the eggs, I boil two eggs for 20 minutes to make one sandwich. You then peel the hard-boiled eggs and mash them up to your desired chunkiness in a bowl, I find using a fork is the easiest for this. The next step is what sets every egg salad apart. Overall, for the most flavor, add about 2 tablespoons of mayonnaise, about a teaspoon of paprika, about a half teaspoon of Mustard, a half teaspoon of onion powder, and a pinch of salt and pepper to taste. It is completely your choice on which type of mustard you’d like to add, If you like a bit of a sweeter flavor, adding Honey Mustard might be for you. Which is what I have done here.

Once the ingredients are incorporated, add a sprinkle of more paprika and cracked pepper. Another option is to add sliced scallions, however, in the picture above, I chose to opt – out of the scallions.

Another amazing part about this recipe is it is very easy to double or even triple the recipe to keep in the fridge for a few days, or to make for multiple people at once.

Ingredients

  • 2 Eggs
  • 2 Tbsp Mayonnaise
  • 1 Tsp Paprika
  • 1/2 Tsp Mustard
  • Salt
  • Pepper
  • 2 Slices Bread
  • Scallions (optional)

Directions

  1. Boil 2 Eggs for 20 minutes, then peel.
  2. Then mash the eggs in a bowl.
  3. Add 2 Tbsp Mayonnaise, 1 Tsp Paprika, 1/2 Tsp Mustard, Salt, and Pepper to taste until fully incorporated.
  4. Then spread onto the bread and sprinkle more paprika, pepper, and scallions if desired.
  5. Finally, enjoy!
