This recipe is PERFECT if you are just starting out in the kitchen or want something for a quick and easy snack.

The secret to this is the bread. I use the Pepperidge Farms sourdough, which makes a HUGE difference in flavor and texture. Another option is that if you have more time and plan on making this multiple days in a row, you could also use homemade sourdough! But in reality, any sourdough works great for this toast.

Start by toasting the bread in a preheated pan with avocado oil for a few minutes on each side until golden. Now, once toasted, I spread on a reasonable amount of ricotta cheese, I use just enough to cover the piece of bread like above. After the ricotta is on, I add the sliced peaches, my preference is Georgia peaches – but that’s mainly because that is what my local farmers’ stand typically has to offer, white peaches would also be great for this. Make sure to spread the peaches evenly to get a bit in each bite of the toast.

The next couple of steps are optional. I like to add a drizzle of honey and some hemp seeds to the top. I also know people who add sea salt and ground pepper to taste. If you’re like me and love the sweetness, you can opt not to.
